Blog Challenge: Day 10

10. Family's favorite dinner recipe

The last few months our favorite meal has been meatloaf, mashed potato snowballs and corn casserole. Its really easy and fairly quick to put together.

For the meatloaf I use a packet of Mc Cormick meatloaf seasoning, and I follow the recipe on the back of the packet. Easy and yummy!

For the snowballs I use instant mashed potatoes because they tend to get thicker and its faster. Make the mashed potatoes as usual then let them sit and get thick. Using a cookie scoop (med), scoop the mashed potatoes and gently release them into the breadcrumbs, then use your fingers to completely coat the outside of the ball.  Put them on a cookie sheet, spray them lightly with cooking spray then bake at 350* for at least 10 min. You can let them get as crispy as you want. Sorry I dont have a picture of them, just trust me, they are yum!


Finally to complete the meal is this cheesy corn casserole recipe. Laurie (my mother-in-law) used this recipe when we visited them this past October and it is AWESOME! I also use this recipe for Thanksgiving, like I said, its awesome and everyone loves it. FYI, I dont use onions like the recipe calls for...eww!
